Translated into English: If you were to select one of the most renowned restaurants in Los Angeles, Providence would certainly be one of them. It was once ranked number one in LA101, among the top 50 in the US, LA's best seafood, and has maintained its two Michelin stars since 2009.
If you want to experience fine dining in LA, you cannot miss this seafood-centered restaurant located in Hollywood! I had to be on the waitlist for a week before I could secure a reservation for their $295 eight-course tasting menu, all focused on seafood. I also added two Uni eggs for $35 each and a wine pairing for $125.
🌟 Small Bites
The amuse-bouche served at the start of the meal was stunning. The four bites offered a range of textures and flavors, from wagyu beef to sea urchin, each one exquisitely prepared and unique.
🌟 Ahualoa Farms Macadamia
Similar to a French onion soup topped with caviar, enhanced by the crunch of macadamia nuts from Hawaii, and generously garnished with caviar.
🌟 Uni Egg
A dish that has been on the menu since the restaurant's opening: sea urchin served with flowing egg custard. After finishing it, I wanted to have it again and it has already made its way onto my list of dishes to replicate at home.
🌟 Warm Fricassee of Shellfish
The combination of sea urchin, abalone, and shellfish is irresistible. It reminded me of a favorite dish from SingleThread.
🌟 Nancy's Down East Sea Scallop
Truly a large scallop, topped with black truffle, and cooked to perfection. It was fragrant and the timing was impeccable.
🌟 Columbia River Steelhead
The steelhead trout was incredibly tender and also accompanied by black truffle. The attention to detail was evident.
🌟 Desserts
Slightly lacking, in my opinion. The apple-based cleanser was a bit too acidic for my taste, but the chocolate dish was good, although not stunning.
Overall, it was a truly impressive experience. The focus on seafood was evident in every dish, with clever elements and no excessive embellishments. Personally, it is one of the most astonishing seafood restaurants I have ever been to. I would say it falls between two and three Michelin stars. Some three-star restaurants rely more on storytelling and gimmicks, but I prefer restaurants that focus on serious culinary craftsmanship. The overall ambiance and service were exceptional, making it perfect for special occasions and celebrations!
