The most famous dishes are local fish and traditional vegetables in Osaka. To express his own culinary philosophy, Chef Shintaro Matsuo named the restaurant "Koyoshi," which means Japanese cuisine that is as soft and resilient as a willow branch that curves elegantly.
The squid, flounder, and tuna sashimi served here are the most exquisite delicacies in Osaka.
Some say that if there is only one Michelin Three-Star restaurant to choose from in Osaka, Koyoshi would be the top choice. This restaurant was the Michelin restaurant I visited on my last trip to Japan, and it was also where I tasted the best kaiseki cuisine. Because of its high reputation, we could only make a reservation at 8:30 p.m. one month in advance.
Koyoshi is located in Kitashinchi, which is a famous entertainment hub in Osaka, with over a thousand high-end restaurants, bars, and clubs. In Japan's dining culture, Kitashinchi is bustling at night. When we arrived, it wasn't yet the reservation time, and the first group of Koyoshi's guests hadn't left yet. So we wandered around nearby, watching Japan's salaried workers come out of various bars or walk in groups of three to five, happily heading to their next destination. I love dining culture so much. Koyoshi is very low-key, with only a curtain and a small wooden sign that reads "Koyoshi."
The restaurant's characteristic is the flexible use of local fish and traditional vegetables in Osaka. After we sat down, we were served with a cup of sweet liquor made of herbs. The presentation of fish dishes, including flounder and tuna sashimi, was lovely. You can dip them in soy sauce or served with seawater, and they are paired with a small cup of sake. My favorite was the snail.
